I don't really restrict water. OTOH, water is not available overnight,
nor when crated. IOW, water is available any time I'm home and awake.
I think restricting more than that CAN lead to guzzling, which throws
off the bladder's reaction, etc. The evening cut off is bedtime.

Hey, me too! They don't get water at night not because I've
got any particular objection to it, btw, but more because I
don't want to have water bowls in my bedroom with eight dogs
wandering around at night. I'm not generally a fan of
restricting water, for the reasons you mention and more.
Proper hydration is really important to health in working
dogs.

While I don't restrict water ever, I'm in no hurry to fill an
empty water bowl at bedtime. I rarely hear a dog drink at
night.

It's always available here too - until it gets close to bedtime then he
starts taking it up and I start putting it back down because there are other
animals that use it (there isn't water overnight in her crate).
Unfortunately it's become a bone of contention. Most of the time he just
complains about.

Pretty much the reason here (but only 3 dogs and a not-so-big bedroom)!
They could go downstairs to get a drink, but they never do, so I guess
they must not be all that thirsty!

I have a water bowl upstairs as well as one downstairs. The dogs don't seem
to realize that they can in fact go up or down stairs to get a drink and
definitely wait for me to fill it up. After Khan's PU/PD, I've become more
conscious about making water available all the time.
