Christmas eve nearly always includes homeade tamales. Sometimes
they are a gift from one of John's co-workers, other times I have
bought them from a small market in town (sold by the dozen). I
love them, and have always insisted on bringing them. After almost 10
years, they are now part of tradition.

This year, we are bringing a turkey. My husband is going to attempt
smoking it in his Traeger. He is a wonderfully creative BBQ'er, so
I think it will probably be great. My own family usually has some sort
of poultry (duck, goose or turkey) and ham. My in-laws usually
do turkey or chicken, and prime rib.

were hard to find/ expensive at Christmas. So now my mom always
buys two turkeys at Thanksgiving time and freezes one.

Christmas eve is usually lasagna or spaghetti. Now I'm hungry.

the point where I don't like replicating Thanksgiving all over again. Maybe
the three meals we're deciding between will give you some inspiration.

We've talked about doing roast beef, Yorkshire puddings, and a goat
cheese-potato dish, plus maybe shredded brussel sprouts with maple glazed
pecans.

Or cornish hens in grand marnier with wild rice, dressing (a la
Thanksgiving), and a green salad with dried cranberries and/or cherries.

Or, as we saw on Food 911 the other day, herb-encrusted pork roast, baked
apples with cornbread stuffing in the hollowed out cores and doused in hard
cider, and mashed potatoes with horseradish. Can't remember the green dish
on that one. I'd probably make plain steamed green beans or asparagus
blanched and sauteed in a little lemon.
