As you already know, labradoodles are mutts, and such, their
looks/temperament is not entirely predictable. What is it that your wife
likes about this that she doesn't like in either a Lab or a Poodle? Is she
okay with meeting the grooming requirements of a Rough Collie?

My daughters are attracted to the following breed: Dalmatian.


Why? How much involvement do you think they will have in the day to day
care of the dog?

My personal opinion is that you are probably better off with an adult dog
than a puppy, with three little kids around. Puppies are a lot of work and
tend to have higher energy and training requirments than adults. It would
not be difficult to find a mellow adult of many of these breeds, that is
already house trained and good with children.
