You need to housetrain him as if he were a puppy. Crate him when he's
home alone. Take him out after eating, drinking, after playing, after he
gets up from sleeping, and then make sure he gets to go out every 2 hours.
Praise him a lot for pooping outside. But also don't let him have the run
of the house when you're not home. The crate itself should help a lot
towards making him hold his poop, and get him into a typical twice a day
pooping rhythm (which is normal for most dogs. Poop in the morning, and
then poop in the evening, right before or right after eating). We often
take my dog for a walk right before he eats, so he p oops on his walk,
then eats and he 's done for the night. Most dogs after eating will need
to poop, becuase the digestion will trigger the intestines to move
contents along, which means triggering hte need to poop.

If your dog won't poop in the AM or PM regularly, try carving out an extra
15 minutes in the morning and do some ball throwing or take a walk around
hte block. Exercise stimulates dogs to poop, as well. So a bit of ball
playing and the dog is likely to need to poop, so he's good for the day
until you get home (good while crated). Once he's reliably pooping twice
a day while being crated, you can try not crating him. Uncrate him for a
short period of time. Since your dog is older, and presuming he's not
destructive, on the weekend go away for an hour and leave him out. When
you come back, if he's pooped, he still needs to be crated. If not, you
can try leaving him for 2 hours. (these amounts would be shorter if it
were a younger dog that is learning not to be destructive in the house).
and just keep on upping the time he's out of his crate. Any time he poops
while you're gone, go back to crating him and start out with the short
uncrated periods of time. you can do this in the evening when you're home
from work or on the weekends.
